Just a little motivational thought today for those of us who live this hard but blessed life. Also for those thinking about getting in to it. It’s not about the money baby! I’ve been blessed to fight for a living early on but that isn’t always great financially either. I’ve done well with pr and do well training but it’s not going to make you a billionaire. It is going to bless you!
Through full contact karate pro fights, Muay Thai pro fights and later sport karate the love of it drives. The love of training, pushing and doing better. That love cascades over into teaching. Training pros is great. What is better is seeing people get better. To know your living is about helping people change their lives and become better. Imparting knowledge while imparting bruises! That is the gift and blessing we get as trainers. Whether you were a competitor or just teach, we are brothers. We are blessed to do this and have it be our life. Sometimes pushing through the aches and pains of this life, we live a life many dream of. Sweating and working out for a living. Having people look up to you. NEVER FORGET that!!! Enjoy the ride. Enjoy the lifestyle. Now go train!
We love using fresh produce from our garden when we cook. As ive mentioned before, its something i learned to love when I was training to fight. These days it serves to keep me interested in eating healthy and as fake chef/ foodie it’s indispensable lol. You can’t beat it.
For this dish we used cilantro and basil and topped off with fresh spinach. A little garlic powder and Sage tossed on the chicken while it grills, gives you just the season to go with the fresh herbs. Good fresh herbs will have pop of their own. In this case I used my panini grill but I often use my charcoal grill outside for this dish. Then we eat on one of our patios
We served it on Bolillo Rolls we get at Sam’s Club. We love them and use the for all sorts of things. You get lots and they are fresh and inexpensive. While we were at Sam’s we also grabbed a bottle of Frontera Cabernet Sauvignon/Merlot blend. We had that while we cooked and relaxed. It was excellent for an inexpensive wine. I was impressed with its character.
Basically once you’ve added your spice and herbs, there isn’t much to do. Let it grill, panini grill will get it there pretty quick so pay attention!!! Cut the breasts up. Mix with herbs and spinach evenly. Boom, you’ve got a great and healthy meal in a bun. Quick, easy and attractive ( guests are impressed if you serve things that are eye pleasing).
You can have food that looks and tastes great but still meet your training requirements. You just have to work at it a bit. Try some ideas like this and see what I mean.

Life can be tough. It often is. Job, financial and relationship stress can be a killer. When that happens and you don’t have a release and a fighting/coping system that you use,things are going to go south fast. Add in health problems that crop up and the stress will make health worse! It will make it all worse!! What do you do? Is there something that helps? Yep, at least for me and you have nothing to lose trying it. Before we go on, mine is martial arts but training at any activity helps. While I hope yours becomes martial arts ( join Team Transcend Today!!! Lol) anything you get a physical/ mental benefit from training at is good.
When you work at building skill, you also build outlets for stress. You build mental and physical strength through doing so. Besides the obvious health benefits of being in better shape, the overall health benefit is well being. Mind and body. You handle things better because you’ve put yourself through things. You handle things better because your trainer has put you through things. That gives you an advantage. It gives you a strength others do not possess!!!!! What more can I say. It makes a huge difference in your life! Get on it now. Change your level of success. Change your health. Change your enjoyment of life.

I love to grill. I LOVE to grill. Outside I only use charcoal. It’s just what I like. I now have the time to do it and enjoy it. Coming from a Native American family spread across the south and West, charcoal and wood grilling is in our blood!!! I’ll do a piece about that one of these days check probably multiple posts! For now, this one uses my indoor panini grill for ease and speed!
I’m going to keep this piece fast and simple as the dish is fast and simple. An ingredient list. Some pics and a video. This kind of dish helped me stay on a training diet when I was fighting and now it just helps keep me on track health wise. Plus it’s just incredibly delicious. As a pro kickboxer that’s a plus. Healthy and tastes great. They don’t always happen together.
Whether frozen or fresh, let the chicken soak in the Chilli Sauce and a bit of garlic for a few hours. A bit of cumin is good as well and some cinnamon.
Chop up some mushrooms and onion and saute that while the chicken grills on the panini grill. You really want to keep the olive oil low so the wraps aren’t super oily. Nice and light. Use a thermometer to make sure the chicken hits the correct temperature if you aren’t used to cooking this way. It works great and gives you a quickly done yet still moist piece of poultry.
A little ranch,sriracha and blue cheese mixed up in a bowl as a side dip and your ready !
Quick, healthy and freshly delicious. As summer moves in here I’ll be doing lots of dishes with fresh herbs and vegetables from my garden. As a fighter it was a huge help. As a trainer teaching fighters about fresh eating it’s a huge help. As a pretend chef with a bit of foodie to him, it’s just fun!
