Leftover Beef? Super Easy Dish And Look Like Culinary Genius!

OK, so I cook quite a bit of lean red meat. I’m a fighter at heart(and of career lol) so shoot me. I Often grill or broil (use convection function as well ) pieces of various red meats for different uses.  I Often cook quite a bit extremely rare ( half minute past raw!) to be used in panini I make. We love our panini grill and use it often. I make extra meat of whatever kind I’m using, to be used later in the week. More sandwiches or a different dish, it just helps save time. When you run large martial arts crew and marketing/advertising agency and your wife runs a large vascular department in a hospital time can be critical. Plan well, eat well and live well!

  The great thing about being prepped and able to use leftovers that don’t look like leftovers is that we can have a quick cocktail or glass of wine while tossing things in and talking about our days. Let me say as a couple who both have high stress world travelling jobs, it’s important. We started dating in high school and we are still together. Rare!!!!  Takes work but worth it. So this week I had some lean beef left from panini. An amount equal to about a large steak you would get eating out somewhere. Perfect!  Check the following list of ingredients and see that it took longer to read this than make it!

The list!
Leftover beef( whatever kind and whatever amount,make it work. Substitute vegetables for overall mass if you need more!)
2cans red beans.
1can of corn.
Ginger(powder)
Cumin
Garlic
Cinnamon
2shots dark rum
1/2 cup red wine
        Pour the beans and corn in a large skillet. Do not drain for now. Use the liquid in the cans to cook in. It give a nice sweet and kind of syrup like liquid. Bring ting to a rolling boil. As it hits that, toss in 3hard shakes of each spice (garlic,cumin, ginger) enough to cover the top surface. Crack two eggs over it and stir it all in.  Turn down the heat to simmer setting.  Pour in the rum, wine and add the sliced up beef. Stir it all up, put a lid on it and let simmer for five minutes. While it’s finishing have a drink and enjoy the company  of your companion !!!!!
